Neither vinegar nor dish soap: burnt-on baking sheets come clean on their own overnight in one liquid

Every kitchen has one: the baking sheet that went from shiny to brown, with dark corners that no amount of scrubbing seems to touch. A trick shared by the Czech news site Centrum skips the vinegar, skips the dish soap and does most of the work while you sleep. All it takes is one liquid, ready in a few seconds.

In short

  • The brown layer is old oil that has baked into a hard film, called a patina.
  • The liquid: very hot water with one dishwasher tablet dissolved in it.
  • Leave the sheet in it overnight, eight hours or more, then wipe and rinse.
  • Wear gloves, and test aluminum and nonstick sheets on a small spot first.

Why baking sheets turn brown and sticky

That stubborn coating has a name. According to Chowhound, it’s a patina, and it forms through polymerization: when oil is heated again and again, its molecules link together into a hard, sticky layer. The site calls it “perfectly safe and normal,” even if chef Geoffrey Zakarian considers it plain grease that shouldn’t be allowed to build up.

That’s also why a regular wash barely changes anything. As Tom’s Guide explains, “standard liquid dish soap is formulated to trap fresh, liquid surface fats,” not a layer that has been baked on for months.

The one liquid: hot water and a dishwasher tablet

The method described by Centrum is simple:

  • Put the baking sheet in the sink or a large container.
  • Pour in the hottest water you can, so that the burnt areas are fully covered.
  • Drop in one dishwasher tablet and let it dissolve, stirring briefly.
  • Leave it overnight, “easily eight hours or longer.”
  • In the morning, pour off the water, wipe with a sponge and rinse with clean water.

Why it works: according to Centrum, dishwasher tablets contain enzymes that break down food residue and grease, plus surfactants that help the grease lift off the metal. Warm water speeds up the process. The same bath works on oven racks and grill grates.

The faster version

There is also a quick variation that went viral on TikTok. Writer Ashley Abramson tested it for Apartment Therapy: one dishwasher pod in the center of each sheet, set in the sink, then boiling water poured over it. On her nonstick sheet, the baked-on bacon grease lifted almost as soon as the water touched it. On her aluminum sheet, the newer burnt bits came off, but the old residue still needed scrubbing in the corners.

The limit

This isn’t magic on decades of buildup: even Centrum admits you won’t completely avoid a light scrub in the morning. Dishwasher detergent is a strong product, so wear rubber gloves, open a window and never mix it with other cleaners. Aluminum and some nonstick sheets can be damaged by harsh cleaning: test a small, hidden spot first, and skip the method for pans that aren’t dishwasher-safe. If you use boiling water, pour it in the sink and protect your hands with an oven mitt. Keep the tablets out of reach of children. And don’t try to bake the tablet onto the sheet in a hot oven: Centrum says that version often fails.

Old baking sheets have other fixes: here’s what mixing potato peels with baking soda is for. The same “fat dissolves fat” logic explains why cooking oil cleans greasy kitchen cabinets. And while you’re at the dishwasher, see why you should open its door right after the cycle.

Hot water, one tablet, one night. That’s the trick.
