Boiling lemon peels with ginger at home: what it’s for and why so many people do it

A small pot on the stove, a few lemon peels, a thumb of ginger and water barely simmering. The habit is spreading fast as the weather cools down, and it fills the whole house with a warm, fresh scent. Here is what it is really for, how to do it, and the one safety rule that matters.

What it is for

The main reason is the smell. Lemon peel is rich in aromatic oils, mostly limonene, the compound behind that clean citrus scent. Ginger adds a warm, spicy note. Heated gently in water, both release their fragrance into the air for hours, and the combination is fresher than the cinnamon and clove pots of the holidays.

It is also a quick way to cover cooking smells. After frying fish, onions or bacon, a simmer pot clears the kitchen faster than an air freshener, and without a synthetic perfume.

And it uses what usually goes in the trash: the peels left after juicing lemons, and the end of a piece of ginger.

The timing explains part of the trend. When the heating comes on and windows stay closed, indoor air gets stale and smells linger longer. A simmer pot is a simple way to make the house feel fresh again in the evening, especially before guests arrive.

How to do it

  • Put the peels of two or three lemons and a few slices of fresh ginger in a small saucepan.
  • Cover with water by about two inches.
  • Bring to a boil, then lower the heat to the minimum so it barely simmers.
  • Top up with water every 30 minutes or so; never let the pot run dry.
  • Variations: add a cinnamon stick, a few cloves or a sprig of rosemary.

The mix can be kept in the fridge and reheated once or twice the next day.

The safety rule

A simmer pot is still a pot on a burner. Never leave it unattended, never go to bed or leave the house with it on, and keep the water level up. Unattended cooking is the leading cause of home cooking fires, according to the National Fire Protection Association. A slow cooker with the lid off, on its lowest setting, is a safer alternative for long sessions.

What it won’t do

Online, some claim it purifies the air or kills germs. It does not. It adds a pleasant smell and a little humidity, which can feel good when the heating dries the air, but it does not clean or disinfect anything. To get rid of a lasting bad smell, find the source.

The idea has a well-known cousin: bay leaves, cloves and cinnamon in a pan of water. And if the bad smell comes from the sink, the fix is elsewhere, as we explained with the glass and the sheet of paper in the sink.

Lemon peels, ginger, low heat and someone in the kitchen. That’s the trick.
